Now, with a clear roadmap to grow from 57 restaurants to 130 across corporate and franchise operations, we’re looking for an exceptional COO to lead our operational function through this next stage.
About the Role
Reporting directly to the CEO, the COO will take overall accountability for the operational performance of the business and the delivery of company EBITDA. This is a highly commercial, people-led leadership role – you’ll build an operating environment where strong financial performance, exceptional customer experience and highly engaged teams reinforce one another.
You’ll bring operational discipline to our existing network while building the people, systems, structure and capability required to support significant future growth – all while living and breathing the Zeus Street Greek values and lightning bolt energy.
What you’ll own
Financial & Commercial Performance – Full accountability for EBITDA delivery, restaurant-level profitability, and controllable operating expenses across the network
Operational Excellence – Consistent standards for food quality, service, cleanliness and speed across every corporate and franchised restaurant
People, Leadership & Culture – Building the leadership capability and succession pipeline to take Zeus from 50 to 120 restaurants
Customer Experience & Sales – Translating operational excellence into stronger sales, loyalty and repeat visitation
Franchise Operations – Strong, commercially-focused partnerships with our franchise network, holding partners accountable while supporting their success
Growth & Scale – Building the operating platform, systems and leadership bench to support a 130 restaurant network
Executive Leadership – A genuine strategic partner to the CEO and a key voice on the executive leadership team
About You
You’re an exceptional multi-site operator, ideally from QSR, fast casual, hospitality or another high-volume consumer business, who brings:
- Significant senior operational leadership experience across a substantial multi-site network – corporate and franchised
- A demonstrated track record of delivering EBITDA and improving unit-level profitability
- Deep commercial understanding of P&L management, labour, COGS and operational KPIs
- Experience leading a business through significant growth or scale-up
- The credibility and confidence to operate as a true partner to the CEO and executive team
You’re commercial, people-led, operationally obsessed and visible – someone who spends time in restaurants, not just in reports. Low ego, high standards, and genuinely energised by building something bigger.
